- 3 lb. yellow squash
- 1 large onion
- 2 eggs, beaten
- 1 tsp. brown sugar
- 1/2 stick butter
- 1 1/2 c. grated Cheddar cheese
- 1 tsp. salt
- 2 tsp. cornstarch
- 1/2 large can evaporated milk
Directions

1Cut squash into 2-inch pieces.

2Add onion and cook.

3Drain well and mash.

4Add brown sugar, butter, eggs, 1 cup of cheese, salt and cornstarch that has been added to the evaporated milk. Pour into flat casserole and sprinkle with remaining cheese.

5Bake in 350° oven for 30 to 40 minutes.
