Ingredients

  • 1 lb. yellow squash
  • 8 or 10 soda crackers
  • 1/4 c. butter
  • 2 eggs
  • 1 large onion
  • 1/2 c. milk
  • 1 c. grated sharp cheese
  • salt and pepper

Directions

    Cook squash and onion together until tender; drain off water and mash squash and onion until fine.

    Add salt, pepper, cheese, butter, egg yolks and finely crumbled crackers.

    Beat egg whites until stiff; fold into mixture.

    Bake in buttered casserole dish at 350° until brown.

    Serve hot.
