Squash Supreme Casserole

Ingredients

  • 3 lb. fresh yellow squash, sliced
  • 1 carrot, grated
  • 1 c. sour cream
  • 1 small can chopped green chilies (hot)
  • 1 tsp. salt
  • 1 c. chopped onion
  • 1 (10 3/4 oz.) can condensed cream of chicken soup
  • 6 Tbsp. butter, melted
  • 1 (8 oz.) pkg. cornbread stuffing mix

Directions

    Cook squash and onion in salted water.

    Drain well and mash. Add grated carrot, soup, sour cream and green chilies.

    Mix stuffing and melted butter.

    Line bottom of 9 x 13-inch casserole with half of buttered stuffing.

    Pour in squash mixture.

    Top with other half of buttered stuffing.

    Bake at 325° for 50 to 60 minutes, uncovered.
