Squid Salad With Sumac Salt

- 1 1/4 pounds squid cleaned, scored, cut into 1 inch pieces
- 2 tablespoons olive oil
- 1 lemon zested
- 3 1/2 ounces mixed greens
- 1 cucumber small, thinly sliced
- 1 cup cilantro leaves fresh
- salt Sumac
- 2 tablespoons fried shallots
- 1 teaspoon sea salt flakes
- 1 teaspoon sumac
- 1/2 teaspoon cracked black pepper
- lime wedges to serve
Directions

1Combine squid with oil and lemon zest. Chill, covered, for at least 30 mins.

2Meanwhile, arrange mixed greens, cucumber and cilantro on a platter.

3To make sumac salt, use a mortar and pestle to crush fried shallots, salt, sumac and pepper.

4Heat a grill plate over high heat. Cook squid for 1-2 mins, until golden and tender. Arrange over salad. Sprinkle with sumac salt and serve immediately with lime wedges.
