- Pie dough
- 8 pilchards or herrings
- 1 onion, finely chopped
- 1/4 cup each chopped parsley, fennel and thyme leaves
- 1 pinch saffron
- 2 tablespoons milk
Directions

1Preheat the oven to 350 degrees F (180 degrees C).

2Line a pie dish with thinly rolled pie dough.

3Remove fins from fish and wipe off scales.

4Slit and gut them and fill the cavities with chopped onion and herbs.

5Arrange round the dish with heads to the rim.

6Cover with pie dough, and make a slit by each head.

7Pull the heads through the dough.

8Dissolve the saffron in the milk.

9Brush the pie dough with the saffron milk, and bake for about 35 minutes.
