Ingredients
- 2 steaks (1/2-inch thick)
- salt and pepper
- 2 Tbsp. unmelted butter (to clarify butter, heat in pan until clear in color)
- cognac
- 1/2 oz. dry sherry
- 1/2 lemon
- 1/2 tsp. mustard
- 1 Tbsp. minced chives
- 1 tsp. minced parsley
- 2 tsp. Worcestershire sauce
Directions

1Sprinkle steaks with salt and pepper.

2Saute in clarified butter until they are light brown.

3Add the sherry and cognac and set on fire.

4When blaze subsides, remove steaks to warm platter. Do not pour off liquid in pan.

5Squeeze lemon juice into pan. Then add mustard, parsley, chives and Worcestershire sauce.

6Stir well and heat to bubbly.

7Spoon over steaks.
