Steak Salad

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 clove garlic minced
  • 14 ounces minute steaks
  • 13 1/2 ounces red kidney beans drained, rinsed
  • 13 1/2 ounces sweet corn drained, rinsed
  • 1 red bell pepper deseeded, chopped
  • 1 bunch radishes trimmed, thinly sliced
  • 1 cup cilantro leaves fresh
  • tortillas to serve

Directions

    Combine 1 tbsp oil, 1 tbsp lime juice and garlic. Rub over steaks. Set aside to marinate.

    Meanwhile, combine beans, corn, pepper, radish and cilantro. Combine remaining oil and juice and toss with salad mixture. Season to taste. Set aside.

    Heat a grill pan over high heat. Sear steaks for 1 min per side. Season to taste. Let rest for 2 mins then slice and arrange over salad. Serve with tortillas.
