Steamed Apple-Date Pudding

- 8 oz. pkg. pitted dates
- 1/2 c. apple cider
- 3/4 c. sugar
- 1/2 c. butter
- 4 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1 large tart apple
- 3/4 c. chopped nuts
Directions

1Peel and chop apple.

2Set aside.

3In blender or food processor, mix dates and apple cider until smooth.

4Set aside. Grease and set aside a 2 1/2-quart baking pan, heatproof bowl or mold.

5Set aside.

6Cream butter and sugar.

7Beat until light.

8Add and beat in the eggs, then dry ingredients.

9Add date mixture. Beat one minute.

10Fold in chopped apple and nuts.

11Spoon into prepared pan, bowl or mold.

12Cover with aluminum foil.

13Steam 2 1/2 to 3 hours, following standard procedure for steamed pudding. Serve warm with sauce.
