Steamed King Salmon with Basil Sauce

- 1 1/2 pounds salmon fillets trimmed, sliced diagonally into 12 strips that are 1 inch wide 4 inches long
- 12 each spinach
- 1 cup basil sauce
- 1 head belgian endive belgian
- 2 ounces salmon caviar
Directions

1Garnish the dish with the caviar.

2On each strip of salmon place a spinach leaf.

3Fold the salmon strip over on top of itself.

4Place the salmon in a steamer and cook it for 2 minutes, or until it is just done.

5On each individual serving plate place an equal amount of the Basil Sauce.

6Artfully arrange three of the salmon strips and three endive spears on top.

7Garnish the dish with the caviar.
