  • 2 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1 c. onion
  • 1 c. celery
  • 3 cloves garlic
  • 2 tsp. sweet basil
  • 1/2 tsp. allspice
  • 1 tsp. Italian seasoning
  • salt to taste
  • pepper
  • water (if needed)
  • 1/4 c. wine (Burgundy)
