- onion
- garlic
- margarine
- fresh celery leaves or parsley leaves
- 3 to 4 cloves green pepper
- curry powder
- black pepper
- garlic powder
Directions

1Cut, chop or dice onion and garlic; put in pot with large pieces of green pepper, celery leaves and cloves.

2Saute in margarine.

3Pour black-eyed peas with juice.

4Season with enough curry to taste and color (not too yellow), garlic powder and a little black pepper.

5Let simmer down, stirring periodically.

6Let water dry out without burning; remove green pepper and celery leaves before serving.

7Serve over plain rice or separately.
