  • 2 ounces (1/3 cup) crumbled Stilton cheese
  • 2 large egg yolks
  • 1/2 cup olive oil
  • Salt and freshly ground pepper to taste

Directions

    Place the Stilton and yolks in a food processor and pulse until combined.

    With the motor running, slowly add the oil and season to taste with salt and pepper.

    Serve with Cauliflower Fritters and Cauliflower-and-White-Bean Brandade (see recipes).
