Stir Fried Ginger Chicken

  • 4 tbsp vegetable oil
  • 2 chicken breast bitesize pieces
  • 2 tbsp Thai garlic coarsely chopped (less English)
  • 1/2 cup chicken stock
  • 150 grams ginger peeled and julienned
  • 2 tbsp soy sauce light
  • 4 tbsp oyster sauce
  • 4 tsp granulated sugar
  • 10 spring onions into one inch segments
  • 2 red spur chillies chopped
  • 1 more spring onion and red chillies to garnish

Directions

    Heat a pan over medium heat until smoking hot.

    Swirl in the oil, add the garlic and saute until golden brown.

    Add chicken for 1-2 minutes.

    Add the stock and ginger then the soy sauce, oyster sauce and sugar for 2-3 minutes.

    Add the spring onions and chillies for one minute.

    Garnish with spring onion and chillies.

    Serve with Thai fragrant rice.
