Ingredients
- 4 c. cooked rice (cold)
- 1/2 lb. ham, diced, or other leftover meat
- 1/2 tsp. salt
- 1/2 c. frozen peas and carrots
- 2 eggs, beaten
- 4 scallions
- 4 to 5 mushrooms, finely chopped
- 2 Tbsp. soy sauce
Directions

1Heat 2 tablespoons of oil and stir-fry ham, mushrooms, peas and carrots for about 2 minutes.

2Remove and set aside.

3Heat another 3 tablespoons of oil and stir-fry scallions and rice.

4Add salt and soy sauce while stir-frying.

5When rice is thoroughly heated, push rice to side of skillet.

6Pour 2 tablespoons oil in center of skillet.

7Scramble eggs in oil until cooked, then mix eggs into rice mixture.

8Return previously cooked vegetables to skillet until rice is fairly dry.
