Stir-Fried Rice

Ingredients

  • 4 c. cooked rice (cold)
  • 1/2 lb. ham, diced, or other leftover meat
  • 1/2 tsp. salt
  • 1/2 c. frozen peas and carrots
  • 2 eggs, beaten
  • 4 scallions
  • 4 to 5 mushrooms, finely chopped
  • 2 Tbsp. soy sauce

Directions

    Heat 2 tablespoons of oil and stir-fry ham, mushrooms, peas and carrots for about 2 minutes.

    Remove and set aside.

    Heat another 3 tablespoons of oil and stir-fry scallions and rice.

    Add salt and soy sauce while stir-frying.

    When rice is thoroughly heated, push rice to side of skillet.

    Pour 2 tablespoons oil in center of skillet.

    Scramble eggs in oil until cooked, then mix eggs into rice mixture.

    Return previously cooked vegetables to skillet until rice is fairly dry.
