Strawberries with Balsamic Glaze and Whipped Cream

- 8 cups strawberries
- 2 tablespoons raw honey
- 2 tablespoons balsamic vinegar
- 1 cup raw or untoasted pine nuts
- 2 tablespoons raw honey
- Seeds from 1/2 vanilla bean, or 1/2 teaspoon organic vanilla extract
Directions

1Removing the stems, slice the strawberries.

2Place in a large bowl and mix with the honey.

3Let marinate for 1 hour at room temperature.

4To prepare the whipped cream, place the pine nuts in a food processor and pulse until completely ground.

5Add the honey and vanilla and mix well.

6If necessary, add water 1 tablespoon at a time to reach the desired cream consistency.

7You may need to stop the food processor several times to scrape down the sides.

8Just before serving, toss the strawberries with the balsamic vinegar.

9Top with whipped cream and serve at room temperature.
