Strawberry Bread

Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 Tbsp. ground cinnamon
  • 2 c. sugar
  • 3 eggs, well beaten
  • 1 1/4 c. salad oil
  • 2 (10 oz.) pkg. frozen sliced strawberries, thawed and drained
  • 1 1/4 c. chopped pecans

Directions

    Combine flour, salt, soda and sugar.

    Make a well in the center of the dry ingredients.

    Stir in oil and eggs.

    Mix until ingredients are moistened.

    Stir in strawberries and pecans.

    Pour into two lightly greased loaf pans.

    Bake at 350° for 1 hour or until bread tests done in center.

    Perforate cake with toothpick and pour reserved strawberry juice over cake.

    Let stand overnight before slicing.

    Store in refrigerator.
