- 1 (8 ounce) can tomato sauce
- 1 cup strawberry jam
- 2 tablespoons red wine vinegar
- 1 teaspoon Mexican seasoning (or up to 1 Tbsp, to taste)
- 12 teaspoon dried thyme
- 12 teaspoon ground ginger
- 8 (1/2 lb) boneless skinless chicken breasts
- 6 -8 cups cooked rice
- 1 12 tablespoons cornstarch
Directions

1Combine tomato sauce, jam, vinegar, Mexican Seasoning, thyme and ginger.

2Pour into lasagne pan.

3Preheat oven to 400 degrees F.

4Rinse chicken and pat dry.

5Cut into bite sized pieces, and add to sauce in pan.

6Toss chicken to coat with sauce.

7Bake until cooked through, about 30 - 40 minutes.

8Remove chicken to serving dish.

9Combine cornstarch with a couple tablespoons sauce.

10Stir to make a paste.

11Pour remaining sauce into saucepan.

12Combine with cornstarch paste.

13Boil sauce, stirring constantly, until thickented, about 5 - 10 minutes.

14Serve chicken and sauce over rice.
