Strawberry Delight

Ingredients

  • 1/2 c. butter
  • 1/4 c. light brown sugar
  • 1 c. flour
  • 1/2 c. chopped pecans
  • 2 (10-oz.) pkg. frozen strawberries, thawed
  • 2 egg whites
  • 1 tsp. lemon juice
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1 c. Cool Whip

Directions

    Mix first 4 ingredients together and spread thinly on cookie sheet.

    Bake 15 minutes at 375 degrees, until light golden brown. Cool and crumble for crust.

    With mixer, beat strawberries, egg whites, lemon juice, sugar and vanilla for about 20 minutes (yes, 20 minutes) at medium high speed.

    Gently, but thoroughly fold in Cool Whip.

    Reserve a small amount of crumbs to sprinkle on top. Put remaining crumbs in bottom of large pyrex baking dish.

    Press down gently.

    Pour strawberry mixture on top, then sprinkle with reserved crumbs.

    Freeze and serve frozen.
