  • 3 c. sifted wheat flour
  • 1 1/2 c. brown sugar
  • 4 tsp. grated lemon rind
  • 2/3 c. canola oil
  • 1 tsp. baking soda
  • 6 egg whites
  • 3 c. sliced strawberries (fresh or frozen)
  • 1 1/2 c. chopped almonds or walnuts

    Preheat oven to 350°.

    Grease and flour 2 standard loaf pans. Sift together flour and baking soda.

    In a large bowl, lightly beat egg whites.

    Mix in oil and rind, using your hands.

    Stir in brown sugar and flour mixture until just blended.

    Fold in strawberries and nuts.

    Do not overblend or bread will be tough.
