Strawberry Pie

- 1 baked (9-inch) pie shell
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 Tbsp. butter (optional)
- 1 qt. fresh strawberries (you can use frozen)
- 1/2 c. water
Directions

1Mash enough berries to make 1 cup pulp.

2Combine sugar and cornstarch.

3Mix well.

4Add water.

5Stir and add pulp.

6Cook, stirring constantly, until thick and translucent, about 10 minutes. Stir in butter and cool.

7Place remaining uncooked berries in bottom of cooled pie shell.

8Cover with cooked mixture. Refrigerate at least 2 hours and serve with whipped cream.

9(If you use frozen berries, thaw and drain, then use juice instead of water.)
