String Beans With Cheese

Ingredients

  • 1/4 c. light cream or evaporated milk
  • 1 Tbsp. butter
  • 1/2 c. grated process cheese
  • 1 (No. 2) can string beans, drained
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 hard-cooked eggs, diced (2/3 c. chopped ham may be used instead of eggs)
  • bread crumbs (to cover casserole)

Directions

    Drain liquid from beans.

    Reduce by boiling to 1/4 cup.

    Cook eggs until done in simmering (not boiling) water.

    Peel and slice in buttered casserole dish. Add beans, butter, cream and seasoning to liquid and bring to a boil.

    Add cheese.

    Pour over sliced eggs. Cover with bread crumbs. Place in hot oven until crumbs are browned.
