- 1 2/3 pounds aubergines
- salt
- 3 1/2 tablespoons butter
- 1 onion chopped
- 3/4 cup provolone or other sliced crumbly cheese
- 2 hardboiled eggs chopped
- 1 teaspoon anchovy fillets soaked and drained
- 1 tablespoon capers
- 1 tablespoon chopped parsley
- 1 teaspoon dill chopped
- 1 1/3 cups tomatoes skinned and
- 4 tablespoons grated Parmesan cheese
Directions

1Halve the aubergines lengthwise and sprinkle salt over the cut surfaces.

2Put into a large shallow pan of cold water cut side upwards cover and bring to the boil.

3Simmer for 5 minutes.

4Remove from the pan and drain.
