- 1 to 2 lb. flank steak in one piece
- 1 large, chopped onion
- 1 chopped red pepper
- 1 chopped green pepper
- 12 mushrooms, sliced
- 1/2 tsp. salt
- 1 Tbsp. thyme
- 4 slices bacon
- 2 Tbsp. bread crumbs
- 6 oz. fresh spinach
- 1 apple, sliced thin
- prepared mustard
- a little oil
Directions

1Saute steak, onion, green pepper, red pepper and mushrooms in a little oil, then add salt and thyme.

2Saute bacon; cut up and drain well.

3Add to first mixture.

4Next, add bread crumbs, spinach and apple and spread mustard of your choice on meat.

5Put filling on long side of meat.

6Lay spinach leaves on top of filling.

7Last, put sliced apples on top of spinach leaves.

8Roll as jelly roll and tie with string.

9Bake in pan sprayed with Pam at 350° for 1 1/2 hours.
