Stuffed Cabbage Rolls

- 10 large cabbage leaves
- 1 1/4 lb. ground beef
- 1 egg
- 1 c. minced onion
- 1/2 c. uncooked regular rice
- 2 Tbsp. margarine, melted
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. (2 oz.) grated Parmesan cheese
- 1 (28 oz.) can whole tomatoes
Directions

1Cook cabbage leaves in boiling, salted water 5 to 8 minutes or until just tender; drain.

2Combine ground beef, egg, onion, rice, butter, salt and pepper.

3Mix well.

4Place equal portions of meat mixture in center of each leaf.

5Fold ends over and roll up. Place cabbage rolls, seam side down, in a large, greased skillet. Sprinkle cheese over cabbage rolls.

6Drain tomatoes, reserving 1 cup of juice.

7Arrange tomatoes on top of cabbage rolls.

8Pour reserved tomato juice over rolls.

9Bring mixture to a boil, reduce heat and simmer, uncovered, for 1 hour.
