Stuffed Chicken Thighs

  • 8 fryer chicken thighs, boned
  • 1/2 c. finely chopped celery
  • 1/2 c. finely chopped onion
  • 1/2 tsp. garlic salt
  • 3 slices bacon
  • 2 Tbsp. sherry
  • 1/4 tsp. poultry seasoning
  • 1/4 tsp. pepper
  • 2 c. soft bread crumbs

Directions

    Cook bacon in small pan over low heat until crisp (about 10 minutes).

    Remove bacon; crumble and set aside.

    Pour off drippings, except for 2 tablespoons (reserve for later).

    Add celery and onion to drippings left in pan.

    Saute for 5 minutes or until soft.

    Remove from heat; add sherry, poultry seasoning, 1/8 teaspoon pepper, bread crumbs and bacon.

    Stir until thoroughly mixed.
