Stuffed Cornish Hens

Ingredients
- 1 (6 oz.) pkg. long grain and wild rice mix
- 1/2 c. celery, diced
- 1 (5 oz.) can water chestnuts, sliced
- 1 (3 oz.) can mushrooms, drained and chopped (1/2 c.)
- 1/4 c. butter or margarine, melted
- 1 Tbsp. soy sauce
- 4 (1 1/2 lb. each) ready-to-cook Cornish game hens
Directions

1Cook rice, using package directions; cool.

2Add remaining ingredients, except Cornish hens.

3Toss lightly to mix.

4Salt inside of Cornish hens and stuff with rice mixture.

5Roast at 375° for 1 1/2 hours (roast loosely covered for 30 minutes, then 60 minutes, uncovered) or until done.

6If desired, occasionally baste with melted butter or glaze the last hour.
