- 1/4 lb. mushrooms, chopped
- 1 tsp. chopped tarragon leaves
- 8 Tbsp. oleo
- 3 Tbsp. flour
- 2 1/2 c. light cream
- 1 c. grated Swiss cheese
- 3 Tbsp. grated Parmesan cheese
- 8 hard-cooked eggs
- 1 c. soft bread crumbs
Directions

1Preheat oven to 350°.

2In a small skillet, cook mushrooms with tarragon in 2 tablespoons oleo until all liquid evaporates.

3Melt 4 tablespoons of oleo in another saucepan.

4Blend in flour, salt and pepper and cook, stirring, for 1 minute.

5Add cream; cook, stirring, until mixture boils and thickens slightly.

6Remove from heat.

7Add Swiss cheese and 2 tablespoons Parmesan; stir until cheese melts.
