Stuffed Fajitas

- prepared butterflied fajitas
- 1 or more containers fresh mushrooms
- 1 onion, sliced
- 1/2 bell pepper, sliced
- 1/2 lb. butter, melted
- 1 slice bacon for each fajita
- 1/2 green hot pepper
Directions

1If butterflied fajitas are not available, cut fajitas into very thin, 5 to 6-inch slices.

2Cook mushrooms; set aside.

3Saute bell pepper, onion and 1/2 hot pepper in butter until tender. Spoon onion mixture on fajita slice.

4Roll up fajita and wrap 1 slice of bacon around it, securing with toothpick.

5When coals are ready, place on grill; cook well done.

6Turn very slowly and in small turns.

7Fajitas have to cook all the way through from one side.

8Top with mushrooms and butter.
