Stuffed Grape Leaves

Ingredients

  • 1 lb. lean ground beef or lamb
  • 1 beaten egg
  • 1 medium onion, finely chopped
  • 1/2 c. uncooked rice
  • 1/4 c. chopped parsley
  • 1 tsp. fresh mint or 1/2 tsp. dried
  • 2 Tbsp. olive oil
  • 1/4 c. water
  • salt
  • pepper
  • dash of lemon juice
  • 1 jar grape leaves

Directions

    Mix together all ingredients, except grape leaves. Wash leaves; remove stems. Put 1/4 to 1/2 cup mixture in each leaf and roll, tucking in ends. Place in one layer in shallow baking dish; pour in small amount of water or chicken broth to prevent sticking. Cover and simmer in 350° oven for 45 minutes.
