- 1 medium head lettuce
- 1 (3 oz.) pkg. cream cheese
- 2 Tbsp. Roquefort (Blue) cheese
- 2 Tbsp. grated carrot
- 1 Tbsp. minced green pepper
- 2 Tbsp. diced tomato
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 1 tsp. minced onion
Directions

1Wash head of lettuce and remove core.

2With a tablespoon, remove enough of the lettuce around the core to leave a cavity (2 to 3 inches) in the center of the head.

3Combine other ingredients listed and pack mixture firmly in cavity of lettuce.

4Cover and chill until center is solid.

5To serve, slice crosswise and add a little French dressing.
