Stuffed Jumbo Shells

Ingredients

  • 1 pkg. large pasta shells
  • 2 lb. Ricotta or cottage cheese
  • 1/2 c. grated Parmesan cheese
  • 8 oz. Mozzarella cheese, shredded
  • 2 eggs, beaten
  • 2 Tbsp. chopped parsley
  • 1/2 tsp. pepper
  • 1 tsp. salt

Directions

    Cook shells according to package directions and drain. Separate or they will stick together.

    Cool.

    Mix together remaining ingredients.

    Put your favorite spaghetti sauce on the bottom of a pan.

    Squeeze the shells lightly and they will open for easy filling.

    Fill each with a generous portion of the cheese mixture.

    Put shells on top of sauce and pour more sauce on top. Sprinkle with more oregano and shredded cheese.

    Bake in warm oven to heat and serve.
