Ingredients
- 1 whole onion, chopped fine
- 1 1/2 lb. lean ground beef
- 12 manicotti shells
- 2 (8 oz.) pkg. shredded Mozzarella cheese
- 1 clove garlic, chopped fine
- 1 tsp. dried oregano
- 1 tsp. dried thyme, crushed
- 2 beaten eggs
- 2 (15 1/2 oz.) jars Hunt's prima salsa spaghetti sauce
Directions

1Brown ground beef well.

2While browning, add onion, garlic, oregano, thyme, salt and pepper.

3When beef is done, drain all juices off.

4Add cheese and beaten eggs.

5Cook over low heat until cheese is melted.

6Mixture will be very stiff and dry.

7Cook manicotti according to package directions.

8Using a teaspoon, stuff meat mixture into shells.

9Place in a 13 x 9 x 2-inch pan. Pour half the salsa into the bottom of the pan, under shells. Pour remaining salsa over shells.

10Bake covered at 350° for 30 minutes.
