Stuffed Manicotti

Ingredients

  • 1 whole onion, chopped fine
  • 1 1/2 lb. lean ground beef
  • 12 manicotti shells
  • 2 (8 oz.) pkg. shredded Mozzarella cheese
  • 1 clove garlic, chopped fine
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme, crushed
  • 2 beaten eggs
  • 2 (15 1/2 oz.) jars Hunt's prima salsa spaghetti sauce

Directions

    Brown ground beef well.

    While browning, add onion, garlic, oregano, thyme, salt and pepper.

    When beef is done, drain all juices off.

    Add cheese and beaten eggs.

    Cook over low heat until cheese is melted.

    Mixture will be very stiff and dry.

    Cook manicotti according to package directions.

    Using a teaspoon, stuff meat mixture into shells.

    Place in a 13 x 9 x 2-inch pan. Pour half the salsa into the bottom of the pan, under shells. Pour remaining salsa over shells.

    Bake covered at 350° for 30 minutes.
