- 1 lb. mushrooms
- 2 Tbsp. oil
- 1 (10 oz.) pkg. frozen, chopped spinach
- 2 cloves garlic, minced
- 2 egg whites, slightly beaten
- freshly ground black pepper
- 1/2 c. Italian seasoned bread crumbs
Directions

1Wipe mushrooms and remove caps.

2Saute whole caps in oil. Chop mushroom stems. Cook spinach according to package directions along with chopped mushrooms. Drain and squeeze to eliminate excess water. Combine with egg whites and bread crumbs. Fill mushroom caps with spinach mixture.

3Place caps in an oiled ovenproof dish and bake at 350° for 10 to 15 minutes.

4Use as garnish around roast meat or chicken. Also may be served as an appetizer.
