Stuffed Peppers

  • 6 small peppers or 4 large peppers, cut in half
  • 1 can tomatoes, chopped
  • 1 lb. ground beef
  • 1 egg, beaten
  • 1 Tbsp. minced onion
  • 1/3 c. uncooked rice
  • salt and pepper
  • 1/4 c. water
  • 1 Tbsp. sugar

Directions

    Mix meat, egg, onion, rice, 1/2 cup tomatoes, salt and pepper together.

    Wash, stem and seed peppers.

    Stuff peppers with meat and rice mixture.

    Put peppers, rest of tomatoes and 1/4 cup water in large skillet with tight lid.

    Cook slowly 45 minutes.

    Remove peppers to platter.

    Add sugar to tomatoes, turn up heat and cook until thick, stirring frequently.

    Spoon sauce over peppers and serve.
