Stuffed Peppers

Ingredients

  • 6 large bell peppers
  • 1 lb. ground turkey
  • 1 large onion, minced
  • 3 tomatoes, peeled and chopped
  • 2 c. cooked rice
  • 1/4 tsp. pepper
  • 1/2 c. bread crumbs

Directions

    Cut off top of each pepper. Remove seeds. Parboil in boiling water in saucepan for 3 to 4 minutes and drain.

    Brown turkey with onion in skillet coated with Pam cooking spray. Add tomatoes. Simmer for 8 to 10 minutes.

    Add remaining ingredients except bread crumbs.

    Mix well. Stuff green peppers with turkey mixture. Place in shallow baking dish. Top with bread crumbs. Bake at 350° for 20 to 25 minutes or until peppers are tender.
