- 4 large baking potatoes
- 1 small onion, minced
- 1/2 c. grated Parmesan cheese
- salt to taste
- 1/4 stick margarine
Directions

1Bake potatoes conventionally or in microwave.

2Cut lengthwise in halves; scoop out into large bowl and crush.

3Add margarine, salt to taste, onion and Parmesan cheese, reserving a small amount.

4Mix well.

5Stuff potato shells (skins) and sprinkle reserved Parmesan cheese on tops.

6Place under broiler until golden brown.
