- 14 teaspoon salt
- 18 teaspoon pepper
- 14 teaspoon garlic powder
- 4 large russet potatoes
- 1 cup part-skim ricotta cheese
- 1 cup reduced-fat cheddar cheese
- 1 cup frozen spinach, thawed and drained
Directions

1Bake potatoes in a 400F oven for 1 hour or until tender.

2Remove from oven and carefully slice each potato in half.

3Scoop insides into a bowl, setting skins aside.

4Mash potatoes with a fork.

5Combine with ricotta, Cheddar, spinach, salt, pepper, and garlic powder.

6Spoon potato mixture back into skins.

7Warm in a 350F oven for 15 minutes.
