- 4 medium baking potatoes
- 1 medium zucchini, diced
- 1/4 c. chopped onion
- 2 cloves garlic, minced
- 2 Tbsp. water
- 2 c. cooked, chopped chicken
- 1 (8 oz.) can tomato sauce
- 1 (8 oz.) can stewed tomatoes
- 3/4 tsp. dried Italian seasonings
- 1/2 c. shredded Mozzarella cheese
Directions

1Scrub potatoes.

2Prick with fork.

3Cook uncovered in microwave on 100% power, 13 to 16 minutes.

4Let potatoes sit while making sauce.

5Combine zucchini, onion, garlic and water in covered container.

6Cook on High, 3 to 5 minutes or until tender.

7Drain. Stir in chicken and both cans of tomatoes and Italian seasonings. Cook covered 5 to 7 minutes until heated through.

8Split potatoes. Mash centers.

9Add salt and pepper to taste.

10Spoon sauce on top, then sprinkle with cheese.

11Return to microwave to melt cheese.
