Stuffed Pumpkin

Ingredients

  • 1 pumpkin (approximately 8 to 10-inches in diameter)
  • 1 (15 oz.) can pineapple chunks, drained
  • 3/4 c. pecans pieces
  • 3/4 c. raisins
  • 3 different kinds of apples, cored and cut into 1/2-inch pieces
  • 1 pear, cored and cut into 1/2-inch pieces
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 c. brown sugar
  • 1/8 c. butter

Directions

    Cut hole in top of pumpkin (save plug to use as a lid). Thoroughly scrape out contents of pumpkin.

    Mix all of the rest of the ingredients and pack into pumpkin (fruit will shrink).

    Replace top of pumpkin.

    Place in baking dish or on cookie sheet and bake at 350° for 1 hour or until fruit is tender.

    Drizzle 1 to 2 tablespoons of wine or brandy.

    Serve as a relish with meal.
