Stuffed Roast Duck

Ingredients

  • 2 ducks (1 1/2 lb. each)
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 bay leaf
  • few celery leaves
  • few sprigs parsley
  • 1 halved medium onion
  • 1 quartered carrot
  • water to cover

Directions

    Bring to boil in covered saucepan over full gas flame the ducks, salt, pepper, bay leaf, celery leaves, parsley, onion, carrot and water to cover; reduce flame to simmer (200° to 225° dial setting on controlled burner) and continue cooking 1 hour. Remove from flame and let stand until cold.

    Drain.

    Stuff ducks and place on rack in shallow pan.

    Place over breast of each duck 2 slices of bacon or thin salt pork.

    Roast in moderate gas oven (325°) for 20 minutes per pound.
