  • 1 (12 oz.) pkg. jumbo shells
  • 2 pkg. frozen chopped spinach
  • 2 c. Ricotta cheese
  • 1 1/2 to 2 c. grated Parmesan
  • 2 eggs
  • salt and pepper
  • ground nutmeg
  • 3 c. marinara sauce
  • 1 c. grated Mozzarella

Directions

    Cook shells; rinse and set aside.

    Squeeze spinach (cooked). Combine with Ricotta, Parmesan, eggs, salt, pepper and nutmeg. Stuff shells with mixture.

    Place 1/2 of sauce in pan; put shells, open side up, in a row.

    Spoon remaining sauce over shells.

    Cover and bake at 350° for 30 minutes.

    Sprinkle with Mozzarella and broil for 5 minutes.
