Stuffed Shells

  • 1 (12 oz.) pkg. jumbo shells
  • 4 c. (32 oz.) Ricotta cheese
  • 8 oz. Mozzarella cheese, diced or shredded
  • 1/2 c. grated Parmesan cheese
  • 2 eggs
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 c. spaghetti sauce

Directions

    Prepare pasta as directed on the package and drain.

    Stir cheeses, eggs, parsley, salt and pepper together in a mixing bowl. In a wide, shallow baking dish, spread some spaghetti sauce evenly just to cover the bottom.

    Gently stuff the cooked shells with cheese mixture and arrange in baking dish.

    Pour the remaining spaghetti sauce over the shells and top with additional Parmesan cheese, if desired.

    Bake in a 350° oven for 30 minutes. Serve with a tossed salad and warm bread.
