Ingredients
- 1 lb. fresh large shrimp, peeled and deveined
- black pepper to taste
- 2 eggs
- 3/4 c. chopped celery
- salt to taste
- 1/2 c. green onion tops chopped fine
- 1/2 c. bread crumbs
- cayenne pepper to taste
- 1/2 lb. crabmeat
- 1/2 lb. boiled shrimp, peeled (small shrimp)
- 1/2 c. chopped onion
- 1/4 c. chopped bell pepper
- 1/4 lb. oleo or 1/2 c. cooking oil
- 1/2 c. fresh parsley, chopped fine
- 1 stale hamburger buns
- all purpose flour
Directions

1Cook onions and 1/2 c. chopped celery in oil or oleo in heavy pot, uncovered.

2Season to taste with salt, black pepper and cayenne pepper.

3Cook slowly until onions are wilted.

4Grind up boiled shrimp and crabmeat in food chopper.

5Mix with onion mixture and cook 15 minutes over medium heat

6uncovered.

7Add buns which have been soaked in eggs; mix well.

8Add bell pepper, remainder of celery, green onion tops, parsley and bread crumbs; mix well.

9Split each fresh large shrimp lengthwise almost to the end and flatten out.

10Stuff centers of split shrimp with mixture, holding each shrimp in the hand and squeezing it together to form a croquette.

11Roll in flour, then in batter.

12Fry quickly for 5 minutes in deep hot fat (375°).

13Drain.
