Stuffed Spaghetti Squash

Ingredients
- 2 spaghetti squash
- 2 Tbsp. olive oil
- 1 c. onion, chopped
- 1/2 c. celery, chopped
- garlic, minced
- 5 roma tomatoes, cut up
- 1 c. mushrooms, sliced
- 1 c. cooked brown rice
- 2 Tbsp. fresh parsley, chopped
- 2 tsp. oregano
- 1/2 tsp. pepper
- 1/2 c. shredded Mozzarella cheese
Directions

1Cook squash whole in microwave until fork enters squash easily or cut squash in half (long length) and remove seeds.

2Place squash, cut side down, in pan of 1/2-inch of water.

3Bake at 350° for 50 to 60 minutes or until tender.

4Saute the onion, garlic and celery in oil.

5Stir in tomatoes, mushrooms, rice, parsley, oregano and pepper.

6Stuff the cooked squash and sprinkle with cheese.

7Bake until cheese melts.

8Serves 6.
