Stuffed Spaghetti Squash

Ingredients

  • 2 spaghetti squash
  • 2 Tbsp. olive oil
  • 1 c. onion, chopped
  • 1/2 c. celery, chopped
  • garlic, minced
  • 5 roma tomatoes, cut up
  • 1 c. mushrooms, sliced
  • 1 c. cooked brown rice
  • 2 Tbsp. fresh parsley, chopped
  • 2 tsp. oregano
  • 1/2 tsp. pepper
  • 1/2 c. shredded Mozzarella cheese

Directions

    Cook squash whole in microwave until fork enters squash easily or cut squash in half (long length) and remove seeds.

    Place squash, cut side down, in pan of 1/2-inch of water.

    Bake at 350° for 50 to 60 minutes or until tender.

    Saute the onion, garlic and celery in oil.

    Stir in tomatoes, mushrooms, rice, parsley, oregano and pepper.

    Stuff the cooked squash and sprinkle with cheese.

    Bake until cheese melts.
