  • whole summer squash
  • butter, melted
  • salt
  • seasoned pepper
  • onion, grated
  • buttered breadcrumbs
  • Cheddar cheese, grated

Directions

    Parboil squash in salt water about 5 minutes or until tender. Cool.

    Scoop out squash, leaving a boat.

    Take pulp and add butter, salt, seasoned pepper and onion.

    Cook until done. Spoon mixture back into squash boats.

    Cover with buttered breadcrumbs and cheese.

    Bake in a 400° oven until cheese is melted and topping is brown (about 25 to 30 minutes).
