Stuffed Summer Squash

- 3 summer squash
- 1/4 c. bulk sausage
- 1/4 c. mashed potatoes
- 1/4 c. cracker crumbs
Directions

1Cut squash in halves lengthwise.

2Cook for 2 minutes in boiling salted water.

3Drain them dry and remove the centers. Place them on a shallow buttered dish; fill with mixture of half sausage-meat and half mashed potatoes.

4Sprinkle cracker crumbs over the top; dot with butter.

5Bake for 30 minutes in a 350° oven.
