Stuffed Turkey Roll

- 12 cup quick-cooking oats
- 1 egg, beaten
- 1 lb ground turkey
- 14 cup chopped onion
- 14 cup finely chopped celery
- 14 cup butter
- 12 teaspoon ground sage
- 14 teaspoon thyme
- 2 cups breadcrumbs, toasted
- 2 tablespoons water
- 2 slices bacon (I prefer turkey bacon) (optional)
- 1 dash salt
Directions

1In bowl combine egg, oats, 1/2 tsp.

2salt, 1/8 tsp.

4Add turkey and mix well.

5On waxed paper, pat mixture into a 12x9 rectangle.

6In saucepan, cook onion and celery in butter till tender.

7Stir in sage, thyme, pepper, and dash of salt.

8Toss with bread crumbs and 2 T.

10Spread on top of meat.

11Roll up meat, jelly roll style.

12Start from narrow end and seal.

13Transfer roll seam side down to greased baking pan.

14Halve bacon strips crosswise lay atop turkey roll.

15Bake uncovered in 325 degree oven for 60 minutes.
