- 8 yellow squash
- 1 (10 oz.) pkg. frozen peas, spinach, broccoli or green beans
- 1/4 c. melted butter
- 1/4 c. half and half
- 1 tsp. salt
- 1/4 tsp. pepper
- buttered bread crumbs
- grated Parmesan cheese
Directions

1Wash squash and drop in boiling water.

2Simmer for about 10 minutes or until tender-firm.

3Drain and cool.

4Cook vegetables of choice according to directions, drain and combine vegetable pulp, butter, milk, salt and pepper.

5Blend until smooth (blender is helpful).

6Pour into squash shells, sprinkle with crumbs and cheese.

7Bake at 350° for 15 minutes and broil until golden brown.
