- 5 large zucchini
- Mozzarella cheese, grated
- Parmesan cheese, grated
- 1 medium onion, chopped
- 3 to 4 pods garlic
- oregano to taste
- 1 stick butter
Directions

1Boil zucchini for 15 to 20 minutes until soft.

2Dish out zucchini from skin.

3Melt butter in a large skillet.

4Mash zucchini with fork and drain. Saute onion in butter until soft. Mix in zucchini, salt and pepper to taste.

5Sprinkle oregano to cover mix.

6Add Parmesan cheese to taste (3 to 4 tablespoons). Add approximately 1/4 cup Mozzarella cheese and garlic to taste. Stuff shells by layering zucchini and Mozzarella cheese. Bake in a 350° oven until brown on top.
