  • 2 cups white flour or 2 cups whole wheat flour
  • 1 teaspoon stevia powder
  • 3 tablespoons erythritol
  • 1 teaspoon vanilla extract
  • 34 cup butter (1 1/2 sticks)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs

    Preheat oven to 375.

    Combine flour, salt, and baking soda in a small bowl.

    Combine butter, stevia, erythritol, vanilla, and beat until smooth.

    Add eggs one at a time, while continuing to stir.

    Combine dry and wet ingredients and stir.

    You may add 1 cup and/or 1/2 cup of coconut, but know, doing this will increase sugar count.

    On a buttered pan, place as many possible 2 cubic inches of batter ( 2 inches between each other).

    Bake 9-11 minutes.
